This is my favorite veggie dish. Roasted sweet potatoes, red onion, and brussels sprouts.

Below are the raw veggies, i actually cut these up ahead of time and put them in the frig. Drizzled with olive oil and a sprinkle of salt and pepper.

Pour the veggies in an oven proof pan and cook at 450 degrees for about 30 minutes. i like my veggies to get browned caramelized spots on them. Just cook to your own taste.

Tasty! I cooked enough to have left-overs the next day. Or i mean no one else in my house likes sweet potatoes, so i get all i want. Daddio just picks out the brussels sprouts.
